The Bakery II is back and sweeter than ever -A Hidden Gem Reborn with Heart and Cinnamon Rolls

The Bakery in Keystone Heights, which had been operating for four years, closed in July 2018 and reopened in 2024

“I closed so I could take care of my brother,” said owner Teri Gibbs.  “After his passing, I decided to call the Bakery number two because his name was Francis Glenn Mielkey, the second, so I wanted to open up the Bakery as the second in honor of him. The little blue hearts that are on the sign there, those are for colon cancer because he passed (due to) colon cancer.”

In addition to The Bakery II’s breakfast, lunch, desserts, and cakes, they’ve made a name for themselves primarily due to their irresistible cinnamon rolls.

“We’re also known as the hidden gem of Keystone Heights,” Gibbs said of her operation, which is across Commercial Circle from the Keystone Heights Post Office. “(That) is kind of cool because we’re tucked away a little bit, but yet word of mouth really gets, you know, gets our name out there.’ Gibbs said she appreciates the bakery’s prior customers who have returned since the reopening.

“Thank you for the continued support over the years, she said, “and for never giving up on us.”

The Bakery II is now open Tuesday through Friday from 7 a.m. to 2 p.m. Gibbs said that as the business grows, she will expand its operating hours. The Bakery II also caters and makes special cakes on the weekends.
